If you think that a burger can only be delicious if it’s made with meat, think again. Transform these Sweet Potato Wedges into Sweet Potato Burgers today. Not only do they taste good, but just like meat, sweet potatoes are packed with protein too!
114 g defrosted sweet potato fries
1 ½ cup drained canned black beans
2 tbsp flour
1 tbsp tahini
1 tsp maple syrup
¼ tsp garlic powder
Spices (cayenne or vegetable spices)
½ cup breadcrumbs
5 burger buns
Assorted toppings of choice (e.g. avocado, onion rings, mixed lettuce, herbs, salsa)
Preheat oven to recommended temperature on package.
Toss defrosted sweet potato fries in oil and bake on parchment lined baking tray according until tender, checking every 15 minutes so they don’t burn or dry out.
Place fries in a large bowl. Add beans, flour, tahini, maple syrup, garlic powder, spices and seasonings to the bowl and mash.
Cover and refrigerate until the mixture is firm enough to easily handle (15-20 minutes).
The mixture will be soft and moist, so fold in ¼ breadcrumbs until you can form patties.
Heat 1 tbsp oil over high heat in a sauté pan.
Form 5 patties and coat them with some breadcrumbs, then place in the hot pan and cook 2-3 minutes each side or until browned.
Transfer to a paper towel.Meanwhile, slice buns, lightly butter and toast.
Assemble on 1 patty and toppings.
Ready to serve. As a bonus, you may serve with additional sweet potato fries.
