Fattoush

Recipe

Ingredients:

  • 2 tomatoes, chopped into chunks

  • ¼ cucumber, deseeded and sliced

  • ½ red onion, sliced

  • Lettuce

  • handful mint leaves and parsley leaves, roughly chopped

  • ½ garlic clove, crushed

  • 2 tbsp red wine vinegar

  • 1 tbsp extra virgin olive oil

  • juice ½ lemon


Cooking:

  1. The night before, toss together all the salad ingredients. 

  2. Make up the dressing and season to taste. 

  3. Leave these separate until the morning when you are ready to serve.
